Chocolate Chip Oatmeal Cookies

Here's another recipe that I got from Bake Happy Manila to change my usual salted chocolate chip cookies.  Surprise though that  it doesn't require a lot of oatmeal, so I increased the amount to almost a cup.  For the taste, I wouldn't lie: the first to two bites are like "meh, I'm not liking this" but as I and my family consume more the cookie tasted better and better and by the last bite we are happy, contented and full (though our hands wanted to grab for another).

The original recipe is for a coco one instead of oatmeal and it calls for a walnut not almond but hey, almonds are way cheaper and I made these cookies when I was on a very tight budget and don't know where to get my fundings for my bake goods.

Chocolate Chip Oatmeal Cookies

1 cup butter, room temperature
1 ½ cups brown sugar
¼ tsp. salt
½ tsp. vanila extract
1 egg, room temperature
2 cups all purpose flour
1 ¼ tsp. baking posder
around 3/4 cup of oatmeal (I used two small pack of Quaker Oat's instant oatmeal)
1 cup or more semi-sweet chocolate chips
½ cup or more chopped almonds

How to:
1. Place butter and sugar in a bowl and beat until light and fluffy. Add vanilla and salt.
2. Beat in egg.
3. Add sifted flour, baking powder and desiccated coconut. Beat just to combine, do not overmix.
4. Fold in chocolate chips and chopped alomonds.
5. Drop tablespoon of mixture onto greased and floured baking trays and bake for 12-15 minutes at 180° C. 6. After baking, transfer into a wire rack to cool.

Grab a glass of milk and watch your favorite shows or read a book! 


  1. Around here everything is expensive, from nuts to almonds. All of them and I like them so much. But unfortunately that's the reason I don't make such tasty recipes like your cookies... and they look so yummy too...
    I'm so sorry fir this late visit, but apart from being a bit busy I messed up the comments that were left on my blog. I guess our brain needs to rest once in a while to keep it working properly.

    1. thanks Xana and no probs, once in a while our brain have to think slowly to rest or else everything will be mess up. I really do hope that I can continue blogging, maybe now not regularly but hope I won't melt and disappear into the cyber space
